(Vegan) Potato Leek soup

  • 3 tbsp olive oil more for drizzling

  • 3 cloves garlic

  • 3 leeks white and light green parts only, chopped

  • 3 celery stalks chopped

  • 7 cup vegetable broth more if desired

  • 2 lb potatoes peeled and cubed

  • 1/2 cup raw cashews

  • 2 bay leaves

  • 1 1/2 tsp herbes de Provence (or fresh thyme leaves)

  • 1 1/2 tsp sea salt

  • 1/2 tsp ground coriander

  • 1/4 tsp ground pepper

Soak cashews in a cup of hot water. Set aside.

In a large pot add the olive oil and garlic and bring to medium heat. Toss in the leeks and celery and cook, stirring often, until wilted (about 5 minutes).

Blend cashews and water with an immersion blender until totally smooth.

Pour in the vegetable broth and add the potatoes, cashews, bay leaves, herbes de Provence, salt, coriander and pepper. Bring the soup to a simmer by increasing the heat. Cover with the lid slightly ajar and cook until the potatoes are soft and tender, about 15 minutes.

Scoop out the bay leaves and discard. Puree the soup with an immersion blender until creamy smooth. (Alternatively, blend the soup in a blender in batches on high speed).

Serve the soup in bowls with a drizzle of olive oil.

Chicken gumbo

  • 2 medium onions

  • 1 green bell pepper

  • 3 ribs celery

  • 3 tablespoons vegetable shortening (or oil)

  • 3 tablespoons all-purpose flour

  • 4 cups chicken stock (unsalted or low sodium)

  • 1 (14 1/2-ounce) can diced tomatoes (with juice)

  • 1 1/2 cups sliced okra, fresh or frozen

  • 1 1/2 teaspoons kosher salt, or to taste

  • 1/2 teaspoon ground black pepper, or to taste

  • 1 teaspoon dried thyme

  • 1/2 teaspoon dried oregano

  • 1/4 teaspoon cayenne pepper, or to taste

  • 1 bay leaf

  • 1 cup long-grain rice

  • 1 1/4 pounds boneless chicken breasts (or boneless thighs)

  • Chopped fresh parsley, garnish

  • Chopped green onions, garnish

Peel and chop onions, peppers, and celery.

For the roux, melt the shortening in a large Dutch oven over low heat. Add the flour and cook, stirring, until medium brown—about 10 to 15 minutes. Stir the roux constantly to avoid burning. If it burns, you will have to start over.

Add the chopped vegetables to the roux, adjust the heat to medium-low to medium, and continue to cook, constantly stirring, until the onion is translucent.

Slowly add the chicken stock and bring it to a boil, stirring constantly. Add the diced tomatoes, okra, salt, pepper, thyme, oregano, cayenne, and bay leaf; bring to a boil.

Reduce the heat to low and simmer, uncovered, for 20 minutes. Meanwhile, cook the rice following the package directions. Set aside and keep warm.

Cut up chicken into bite size pieces. Add the chicken to the soup and cook, covered, for 6 to 8 minutes longer, or until the chicken is thoroughly cooked. Taste the soup and adjust the seasonings with more salt and pepper, as needed.

To serve, scoop a mound of rice into the center of each of the four large, shallow bowls. Ladle the soup around the rice. Sprinkle with fresh chopped parsley and/or green onion tops, if desired.

Market Creamy Veggie Chowder

6 slices bacon
1 lg onion
1 st celery
1 lg carrot
1 med parsnip
1 med turnip
1/3 c flour
1/4 tsp salt
1/8 tsp pepper
4 c chicken broth
1 med swt potato, peeled & diced
1 med potato, diced
1 bay leaf
1 1/2 tsp Worcestershire sauce
2 c milk
Cheddar Cheese, shredded (opt)

In a large pan, or Dutch oven, cook bacon until crisp. Remove and drain on paper towels. reserve bacon to add later. Keep 2 tbsp bacon drippings in pan.

Peel and dice onion, carrots, celery, parsnip, and turnip. cook in reserved bacon drippings in pan, ~ 6-8min until fragrant

Sprinkle veggies with flour, salt, and pepper. Stir until blended. Gradually add broth. Bring to a boil. Cook and stir for 2 min until thickened. Stir in the sweet potato, potato, bay leave and worcesterrshire sauce.

Reduce heat. Cover and simmer ~ 15-20 min or until potatoes are tender. Stir in milk and reserved bacon. Heath through. Discard bay leaves. Garnish soup with shredded cheese. Makes 6 servings.

Spicy Sweet Potato Peanut Soup

1 lg onion, chopped coarsely
2" of ginger root, minced
1 clove garlic
8 c veg stock
2 med sweet potatoes (~1lb) 3/4" cubed
1 can of tomatoes (28 oz)
8 large collard (or kale) leaves, chopped up
1/3 c natural peanut butter
2 c. whole or chopped peanuts
pinch cayenne pepper

Saute onion in canola oil, then add garlic and half the ginger and stir. Add stock, heat, and add sweet potatoes. Season with salt, pepper, cayenne. Simmer ~5 mins, add chicken cubes (optional), cook ~ 2 mins), add tomatoes, greens, remaining ginger, peanut butter. When sweet potatoes are just tender (~3 min), take off heat. Be careful not to overcook or sweets will fall apart. Adjust seasoning, and serve topped with a handful of chopped peanuts.

Arugula Potato Soup

3 tsp butter
2 onions or leeks
1 1/2 lbs. of potatoes
2 1/2 cups of broth or water
1/3 cup milk,
1 bunch of arugula
1/8 tsp ginger
1/8 tsp nutmeg

Saute onions, leeks for about 20 minutes. Add chopped potatoes, broth, ginger and nutmeg. Bring to a boil and allow to simmer partially covered for 30 minutes. Puree half the solids and return to soup. Add milk and bring to a boil. Add steamed arugula and cook an additional few minutes! Serve nice and hot with yummy bread.

Not sure where this old standby came from, but it's a great variation on a familiar theme.

Squash Soup with Thai Spices

2 acorn squash, pumpkins, or other smallish winter squash
3 tablespoons unsalted butter, room temperature
1 14-ounce can coconut milk
1 teaspoon (or more) red Thai curry paste
Water
2 teaspoons fine grain sea salt (or to taste)
 

Preheat the oven to 375 degrees and place the oven racks in the middle.

Carefully cut each squash/pumpkin into halves (or quarters). Slather each piece of squash with butter, sprinkle generously with salt, place on a baking sheet skin sides down, and place in the oven. Roast an hour or until the squash is tender throughout. When the pumpkin/squash are cool enough to handle scoop it into a large pot over medium high heat. Add the coconut milk and curry paste and bring to a simmer. Remove from the heat and puree with a hand blender, you should have a very thick base at this point. Now add water a cup at a time pureeing between additions until the soup is the consistency you prefer - a light vegetable stock would work here as well. Bring up to a simmer again and add the salt (and more curry paste if you like, continue adding to taste). Serves six.

Potato Leek Soup

6 cups water
5 potatoes
4 tsp butter
2 leeks
fresh thyme
basil (to taste)
1 cup cream
1/4 cup parsley.

Melt butter in a stock pot. Slice leeks and sauté 5 minutes, add potatoes and sauté for another 5 minutes. Cover and cook for 3 minutes. Stir in 1 cup of stock and cook further (25 min.) until potatoes are tender. Puree, then return to stockpot and add the rest of stock, cream and herbs. Cover and simmer 15-20 minutes.

Chilled Cucumber Soup

4 cucumbers, peeled, seeded and chopped
1 - 2 c water
2 c plain yogurt (or half sour cream)
1 clove garlic, peeled
several mint leaves
2 tbsp fresh dill
1-2 tsp salt
1 tbsp honey
2 scallions, finely chopped

Combine the chopped cucumber, 1 c water, yogurt, garlic, mint, dill, honey, and 1 tsp salt in a blender or food processor. Puree the ingredients, adding more of the water until the soup is a consistency you like. Season with more salt to taste. Transfer the soup to a large bowl and chill for several hours. Garnish each serving with chopped scallions.

This one comes is from the Farmer John Cookbook (available at our Farm Shop), and Karen made it on Tuesday - she says its the same as every other cucumber soup - really delicious and great on hot days. I won't say that the kids LOVED it, but they definitely ate it without too many grimaces.

Cauliflower Soup with Blue Cheese

1 medium cauliflower
1 tablespoon unsalted butter
2 smallish yellow onions, peeled and finely sliced
4 thyme sprigs
2 bay leaves
sea salt and freshly ground pepper
4 cups chicken or vegetable stock
1/2 cup Blue Cheese cheese (try Great Hill Blue from the Farm Shop)
1/3 cup creme fraiche
parsley for garnish


 Remove the outer leaves from the cauliflower and break it into small florets (don't bother to remove the stalk - it only adds to the flavor). Set aside. Melt the butter gently in a large pot over medium heat. Add onions and sweat gently until translucent. Add cauliflower, thyme and bay leaves. Season with a little salt and pepper. Pour in the stock, stir and bring to a simmer. Cover and simmer for 20 minutes or so, until the cauliflower is very soft. Crumble in the Gorgonzola and stir over a low heat until it has melted into the soup. Add the creme fraiche and stir to combine. Pick out the bay leaves and thyme stalks, then blend the soup until really smooth. Return the soup to the pan and reheat gently. Taste and add a little more salt and pepper if you think it needs it. Serve topped with chopped parsley. Serves four.

Miso Soup 101

1 medium onion, sliced in half moons
1 cup chopped komatsuna, bok choy, kale, collards, or other greens
1 carrot cut into thin rounds
1 three-inch piece wakame sea vegetable for additional flavor and trace minerals (optional)
1 cup tofu, cubed (optional) (try Vermont Soy in the farm shop)
1 quart water
3-4 tablespoons of light or dark miso (pick one from the farm shop!)
Chopped scallion or parsley for garnish


 Place water, carrot, onion, and wakame in 2-quart saucepan and bring to boil over high flame. Reduce flame to medium and simmer for 10 minutes with lid on. Add greens and tofu and simmer with lid off until tender. In a small bowl blend miso with 3-4 tablespoons of liquid from pot. Reduce flame to low, add diluted miso, and simmer briefly. Garnish and serve.

Radish Top Soup

2 tablespoons butter
1 large onion, diced
4 med. red potatoes, diced
4 cups raw radish greens
4 cups chicken broth
1/4 cup milk
5 radishes, sliced 

Melt butter in a large saucepan over medium heat. Stir in onion, and saute until tender. Mix in potatoes and radish greens, coating them with butter.Pour in chicken broth.Bring the mixture to a boil. Reduce heat, and simmer 30 minutes.Allow the soup mixture to cool slightly, and transfer to a blender. Blend until smooth. Return the mixture to the saucepan. Mix in the milk. Cook and stir until well blended. Serve with radish slices.

Winter Stew With Daikon

8 dried shiitake mushrooms
1/3 lb. udon noodles
2 scallions, chopped
1 carrot, chopped
5 cabbage leaves, chopped
4 fresh water chestnuts, halved
5 ounces mudium tofu, cubed
4 cups stock
salt
1 tsp. soy sauce
1 tsp. mirin
8 pieces peeled daikon, 1/2 " thick

Soak mushrooms in hot water for half an hour. Drain; cut off hard stems, cut in half.
Cook udon according to package. Drain immediately. Put in bowl of cold water.
Combine the stock, salt, soy sauce and mirin in a pot. Heat the stock. Add veggies. Cook until tender. Add noodles and tofu and cook until they're just heated through. Serves 4.

Tomato Corn Chowder

3 scallions
1 tsp oregano and thyme
4 paste tomatoes, diced
1/4 cup flour
1 cup cream
2 cups fresh corn kernels
1/4 cup parsley

Fresh Brookfield sweet corn and paste tomatoes will make for an especially tasty soup!! Saute scallions with oregano and thyme over medium heat until browned. Add tomatoes, then 4 cups of water. Lower the heat and simmer 30 minutes covered. Mix flour and cream (watch for lumps!) and add to soup. Simmer and add corn kernels, pepper and parsley. Simmer 15 minutes uncovered and enjoy!

Spicy Pumpkin Soup

1 small pumpkin
3 carrots
1/2 onion (or leek)
1/2 tsp turmeric
1/2 tsp cumin
1/2 tsp cinnamon
1/4 tsp ginger
3/4 cup powdered milk
2 tsp honey

Peel and chop pumpkin and carrots and simmer in water till tender. Sauté onion till soft and add spices. Allow to cook for a few minutes then add mixture to the pumpkin pot. Puree the pumpkin in its water then add the milk and honey. Another option is to take leftover cooked pumpkin and fresh milk. Warm and puree them together instead of using cooking broth.

Smut Soup

Here's a funny one. The main ingredient is a fungus particular to corn which has earned the dubious name of 'smut.' It can be used as you would any other mushroom-y fungus. This recipe was developed by our brave and imaginative shareholder/chef Barbara Hanson:

2 Tbsp. olive oil
1 cup chopped onion
3 cloves minced garlic
2 minced jalapeno peppers
1 cup chopped smut
1 tsp. dry epazote
5-6 cup chicken broth
1 cup whole milk
salt and pepper to taste.

Saute first 5 ingredients until liquid has cooked off. Add broth and simmer for 15 minutes. Puree in food processor. Return to pot and add milk, salt & pepper. Heat and serve.

Root Soup

2 turnips
2 potatoes
2 carrots
2 parsnips
2 onions
1/2 cup parsley
1/2 cup barley or rice 4 cups broth
1 tbsp basil
2 dashes of cayenne
1/8 tsp curry powder
salt to taste
1 tbsp of dill

Grate the roots by hand or in a food processor. Put the grated vegetables in a a large saucepan. Add the parsley, barley, broth, and basil and bring the soup to a boil. Reduce the heat, cover and simmer for about 1 hour. Check periodically and add water if needed.Stir in the seasonings to taste. Sprinkle with dill before serving.

Portuguese Kale Soup

2 cups cooked kidney beans (1 can)
2 cups cooked chick peas
3 cups chopped tomatoes
garlic to taste
1 large potato chopped small
4 cups kale, packed and roughly chopped
1 tsp basil
1 tsp oregano
2 cups thinly sliced chorizo (Portuguese sausage) or kielbasa
salt and pepper to taste

Mix all ingredients, add water, vegetable or beef stock to 2" above ingredients. Simmer 45 min.
 

Pamela's Fresh Pea Soup

1 tbsp butter
1 tbsp olive oil
1 large onion, chopped
1 small head of lettuce, shredded
a hand full of fresh spinach
1 tbsp chopped parsley
5 cups fresh young shelling peas
5 cups chicken stock
1/4 cup uncooked white rice
2 tsps sugar
salt and pepper to taste
1/4 cup finely chopped fresh mint
1 cup milk
fresh mint sprigs

Heat butter and oil in pot, add garlic, sauté. Add lettuce, spinach, and parley, cook and stir until vegetables wilt. Add peas and 3 cups of stock. Cover pot, bring to a boil, then reduce and simmer 5 minutes. Remove from heat. In food processor, process in batches until coarsely processed. Return to pot, add remaining stock, and bring to boil. Add rice, reduce heat and cook for 15 minutes. Add sugar, salt, pepper, mint, and milk. Heat slowly, stirring until soup is hot. Do not boil. Garnish with mint sprigs. Makes about 7 cups.

Onion Soup

6 Tbsp. butter
5 cups thinly sliced yellow or white onions
2 small cloves garlic, minced
1/2 tsp. dry mustard
dash of thyme
1 quart stock or water
1 Tbsp. tamari
3 Tbsp. dry white wine
salt and pepper to taste
1 tsp. honey (optional)
croutons
grated cheese

Heat butter in saucepan; add onions and garlic and cook over medium heat until brwn and tender. Stir in mustard and thyme, then add remaining ingredients except croutons and cheese. Cover and cook slowly, at least 30 minutes. Top with croutons and cheese. Makes 4-6 servings.

Lombardy Minestrone

2 tbsp olive oil
1 leek, sliced
1 cup celeriac, diced
3 cups butternut squash, peeled and cubed
2 cups kidney beans, soaked and simmered until soft
2 cups tomatoes, diced
4 cups swiss chard, chopped
6 cups water or stock
1 tsp herbes de Provence (marjoram, rosemary, sage, thyme)
salt and pepper to taste
2/3 cups uncooked long grain brown rice

Heat oil in deep coverd pan. Add leek and celeriac, stirring occasionally until soft. Add squash, cook a couple of minutes, stir once or twice. Add remaining ingredients. Cover, bring to a boil. Stir in rice. Reduce heat and simmer, covered for 1 hour. Stir occasionally.
